Description
Grape molasses or "petimezi" in Greek, is the thick dark syrup produced from boiling grape must. As a grape byproduct, with the grape's characteristic strong aroma and bitter sweet taste, it is used for making sweet & sour base for meat sauces, ice cream syrup, grape fillings for pies or as a sugar substitute in pastry and baking. In the Byzantine it was widely used for pastries and dough pies and in Crete it is still used as a sugar substitute in many recipes. Petimezi has anti-inflammatory and antioxidant properties and helps fight soar throat. It is also rich in Vitamin B6, Magnesium, Potassium and Iron. Use it as a base for sauce for meats (as you would use soy-sauce), as a bakery ingredient for bread, in chocolate cakes instead of/or in combination with sugar, or in the baking of the traditional "moustokouloura" (cookies made of must).
