Eggplant/aubergine is usually considered a vegetable, but in the Greek tradition eggplants are also popular in the form of a sweet, called spoon sweet, served with coffee. For the preserve, a specific eggplant cultivar is used, that produces mini eggplants with less flesh and a thick skin, appropriate for the boiling process that turns it into a preserve.
